What is Compound Butter?

  • Compound butter is made by whipping the butter with additional ingredients, such as herbs, spices or aromatic liquids, etc.
  • To enhance flavor in various dishes such as meat, poultry, vegetable, fish, waffle, pancake, etc.
  • The butter is usually wrapped in plastic wrap, aluminum foil, parchment paper, or by using a piping bag to make the flower shape, then cool it in a chiller.
  • Melted compound butter can serve as a substitute for the sauce.
  • Can be used as a spread for a sandwich.

1. Maître d'Hôtel butter

  • Maître d'Hôtel butter is a type of compound butter ( French origin), prepared with butter, parsley, lemon juice, salt, and pepper. It is a savory butter that is used for meat dishes such as grilled steak,  pan-fried fish, or grilled chicken breast, and other foods.


2. Café de Paris Butter

  • The sauce was first popularized in the 1940s by the Cafe de Paris restaurant in Geneva, then owned by Arthur-François (Freddy) Dumont, and entrecôte Café de Paris remains the restaurant's specialty.

1. Savory Taste:

  • For grilled or roasted meat, fish, chicken, seafood, or vegetable.
  • The Ingredients creation, you can use any fresh or dried herbs and spices, as well as other items:  Dried mushrooms, Spanish paprika, capers, crushed pink peppercorn, anchovies, mustard, pesto, crushed peppercorns, lemon zest, chopped chipotle pepper, curry powder, jalapeno, red chili flakes, etc.

  • Butter, garlic, lemon/ lime juice, parsley, salt, and white pepper


2. Café de Paris Butter

  • Butter, mustard, marjoram, dill, rosemary, tarragon, paprika, capers, chives, curry powder, parsley, shallot, garlic, Worcestershire sauce, brandy/ cognac, anchovies, salt, and white pepper.


3. Garlic butter or Beurre à la Bourguignonne.
