What is Baking?
- Similar Roasting
- Baking is dry heat cooking of food, normally in an oven, but also in hot ashes, or on hot stones.
- Heat is gradually transferred "from the surface of cakes, cookies, and bread to their center.
- It is primarily used for the preparation of bread, cakes, and cookies
- Baking when the food is placed in a casserole.
- Baking when the food is wrapped with aluminum foil, banana leaf, puff pastry, or paper bread (baking parchment paper).

Water Bath Baking Method
- Cheesecake, souffle, baked custards, such as crème caramel, are among the items that need protection from an oven's direct heat, and the bain-marie method serves this purpose.
- The cooking container is half-submerged in water in another, larger one so that the heat in the oven is more gently applied during the baking process.

Baking Tips
- Preheating an oven is especially important with baking when you use yeast, baking soda, and baking powder as leavenings, all of which react to heat.
- The right temperature from the start and your dish can start cooking properly as soon as you put it in the oven.
- An oven thermometer will help you calibrate your oven’s temperature to see if your own oven runs a few degrees too cool or too hot.
- Conventional ovens cook food by surrounding it with hot air, while convection circulates the air with an internal fan for more even and often times quicker cooking. This may require adjustments to temperature and baking times.
