What is Coulis?

  • Coulis is a thick sauce made from vegetables or fruits.
  • Should be cooked, pureed, and strained.
  • The texture is thinner than pure and thicker than sauce.
  • Usually, vegetable coulis is served as a sauce for the main course or appetizer dishes.
  • Fruit coulis is most often served as a dessert sauce.
  • The thinner agent: Water, juice, stock, broth, etc.

2 Categories of  Coulis

1. Vegetable Coulis

  • For the main course or appetizer sauce 
  • E.g. roasted bell pepper coulis, tomato coulis, carrot coulis, pumpkin coulis, beet coulis, yellow pepper coulis, etc.


2. Fruits coulis 

  • For dessert sauce.
  • E.g. Mango coulis, raspberry coulis, apricot coulis, strawberry coulis, pineapple coulis, blueberry coulis, etc.







Roasted Red Bell Pepper Coulis Recipe

Ingredients

  • 1.5 cups. Diced red bell pepper.
  • 3 tablespoons. Olive oil.
  • 2 tablespoons. Chopped shallots.
  • 1 tablespoon. Rice wine vinegar.
  • To taste of salt.
  • 1 Pinch. Sugar.
  • 1 pinch. Cayenne pepper.
  • Chicken stock is a thinner agent when the coulis is too thick.




Method

  • Saute all ingredients with olive oil in a saucepan.
  • Moist with rice wine vinegar and chicken broth.
  • Simmer for a few minutes.
  • Season with salt, pepper, and sugar.
  • Blend and strain with the strainer.
  • Ready to serve.

Mango Coulis Recipe

Ingredients

  • 2 cups. Frozen or fresh mangoes.
  • 1/2 cup. Sugar.
  • 1 tablespoon. Lemon juice.
  • Mango juice/water as a thinning agent.



Method
  • Combine all ingredients in a saucepan.
  • Bring to a boil and simmer over medium heat.
  • Cook until soft.
  • Transfer to the blender.
  • Blend until smooth.
  • Ready to serve.
