What is a Sandwich?

• A sandwich is a food consisting of vegetables, sliced cheese, or meat, placed on or between slices of bread.
• The sandwich began as portable finger food in the Western world, though over time it has become prevalent worldwide.
• Sandwiches are a popular type of lunch food, taken to work, school, or picnics.
• The famous sandwich: American Club Sandwich, Reuben sandwich, Hamburger, Hot dog, Croque monsieur, Banh mi, Burritos, Tuna sandwich, Egg sandwich, etc.

The Concept of Sandwich Creation

• Good quality ingredient
• Delicious Taste

• Assembly can happen in advance, or à la minute depends on the desired outcome

1. Sandwich Bread 

Criteria 

• Firm and thick enough to hold a filling, not so thick sandwich is dry
• Keep sliced bread covered to prevent drying
• Toast immediately before sandwich assembly

Types of bread

• Pullman Loaves: White bread, Whole wheat-bread, Rye bread, etc.
• Peasant-style: Pumpernickel, Sourdough, Boule, Croissant, etc.
• Rolls: Hard roll, Soft roll, Kaiser rolls, buns, etc.
• Flatbreads: Focaccia, Pita, Ciabatta, tortilla, etc.
• Wrapper: rice paper, egg-roll wrappers, tortilla, etc.

2. Sandwich Spread

Criteria

• The moisture barrier, prevent the bread from getting soggy  
• Holds a sandwich together 
• Add flavor and richness
• Add moisture and help hold the sandwich together  
• Some fillings include spread in filling mixture (i.e. ham salad) - no need to then add a spread
• Flavored butter or mayonnaise base, spreadable cheeses, tahini, jams, and condiments

Varieties of Spread Base

1. Butter Spread with Flavor of.....: Lemon, herbs, Anchovy, Caviar, Mustard, Horseradish, Pimiento, Blue cheese, Shrimp, Olive, Shallot or scallion, Curry, Capers, etc. 
2. Dairy Product Spread such as Ricotta, Cream Cheese, Greek yogurt, Cheese Sauce, Mascarpone Cheese, Feta Cheese, etc.
3. Mayonnaise Spread such as Blue Cheese Dressing, Thousand Island, Honey Mustard Dressing, etc.
4. Meat and Fish Spreads such as Tuna spread, Roasted beef spread, etc.

3. Sandwich Filling

Criteria

• Meats should be properly cooked, vegetables properly cleaned and dried
• The filling should determine how all the other elements of the sandwich are selected and prepared

Types of Filling

1. Vegetables: Radish slices, Olives, Pickles, Capers, Pimiento, Pickled onions, Lettuce leaves, Slices of tomato or onion,, Asparagus tips, Cucumber slices, Cherry tomato, Watercress leaves, Marinated mushrooms, Sprouts, etc.
2. Meat: Roasted Beef, Braised Beef, Steamed Chicken, Roasted Chicken, Smoked Beef, Grilled Chicken, Smoked Turkey Breast, etc.
3. Fish and Shellfish: Smoked oysters, Smoked clams, Smoked salmon, Smoked trout, Pickled Herring, Shrimp, Anchovy fillets, Caviar, Salmon or tuna flakes, Crabmeat, Lobster chunks or slices, Sardines, etc.
4. Cured Meat: Bresaola, Pastrami, Pepperoni, Prosciutto, Bacon, Ham, Salami, Sausages, Smoked Meat, Smoked salmon, etc.
5. Egg and Cheese: Boiled Eggs, Fried Eggs, Omelets, Scrambles Eggs, Swiss Cheese, Cheddar Cheese, Feta Cheese, Fresh Mozarella, etc.

• Dips, spreads, dressing, or relishes
• Sliced fruits
• French fries potatoes
• Potato dishes (Potatoes wedges, French fries, roasted potatoes, etc.)
