What is Salad Dressing?

  • A sauce for salads, typically one consisting of oil and vinegar mixed together with herbs or other flavorings.

3 Types of  Salad Dressing

1. Vinaigrette Base:

  • Vinaigrette is made by mixing an oil with something acidic such as vinegar or citrus juice.
  • The ratio is 3:1 = Vinaigrette consists of 3 parts oil and 1 part vinegar or citrus fruit juice mixed into a stable emulsion.
  • E.g. Italian Vinaigrette, French Vinaigrette, etc.



2. Mayonnaise Base

  • Mayonnaise is a thick cold dressing usually used in sandwiches and salads or as condiments.
  • It is a stable emulsion of oil, egg yolk, and lemon juice or vinegar
  • E.g. Blue cheese dressing, Thousand Island dressing, Honey mustard dressing, etc.



3. Dairy Product Base

  • Dairy Products are a type of food produced from or containing the milk of mammals.
  • Primarily produced from mammals such as cows, buffaloes, goats, sheep, camels.
  • E,g. Dill yogurt dressing, Cream cheese dressing, Mascarpone salad dressing, etc.

  3. Emulsifier Ingredient
  4. Herbs or flavor ingredients




1. Types of Oil 

  • Corn Oil: Light golden color, nearly tasteless
  • Soybean, Canola, Sunflower Oils, Nearly tasteless
  • Peanut Oil: Mild, but distinctive flavor, expensive
  • Olive Oil: Distinctive fruity flavor, greenish color
  • Walnut Oil: Distinctive flavor, very expensive
  • Winterized Oil: Any oil that has been treated so it will remain a clear liquid when chilled
  • Salad Oil
  • Etc.

2. Types of Vinegar 

  • Cider Vinegar: Made from apples, brown color, slightly sweet
  • White/Distilled Vinegar: Purified to give it a neutral flavor
  • Wine Vinegar: White or red color;  has a wine flavor
  • Flavored Vinegar: Have the flavor of other products added to them, such as tarragon, garlic, or raspberries
  • Sherry Vinegar: Made from sherry wine and has a sherry flavor
  • Balsamic Vinegar: A wine vinegar aged in wooded barrels;  dark brown color and sweet taste
  • Specialty Vinegar: Malt vinegar;  rice vinegar;  vinegar flavored  with fruits such as raspberry
  • Citrus Juice: Lemon, lime, or orange juice may be substituted for vinegar in some dressings.




How to make Apple Cider Vinegar

  • Clean and chop 6 large apples
  • Place the apples in a large jar and add the sugar solution
  • Place a water-filled zip lock bag on top of the apples
  • Cover the jar top with cheesecloth & let the ingredients ferment
  • Store the jar in a cool, dry, and dark place for fermentation.
  • Track the fermentation process at regular intervals (every 14 days)
  • Strain out the fermented liquid after 70 days
  • Let it sit another 60 days, then strain & transfer to a bottle
  • Apple Cider is ready.

3. Natural Emulsifiers

  • Honey
  • Maple Syrup
  • Dijon mustard
  • Grain mustard
  • Egg yolk
  • Ready made mayonnaise
  • Yogurt or other dairy product 
  • Tomato Ketchup
  • Tomato paste
  • Puree vegetables
  • Puree fruits
  • Thick vegetable or fruit juices
  • Etc.

  • Italian Basil
